lugaw!

a friend currently in australia complained on how australian cooks can't cook rice properly: not enough water and undercooked. (no offense to my aussie friends.)

the conversation veered towards congee and of course, being away the from 'pines that he is, i teased him about how i could easily get my fill of lugaw, if i wanted to. it seems that most people would return to a warm bowl of lugaw for comfort.

and on days like this (cold, gray, overcast, and dreary) i could use a bowl of lugaw to cheer me up. there aren't a lot of things to be happy about in my life lately, but if could get a good bowl of lugaw (with beef tenderloin, tripe and intestine, a hard-boiled egg, sprinkled with toasted garlic and chopped scallions -- haha!) i know things aren't really hopeless.

ahm...isnt it that its called goto--with the beef and tripe or intestines or all three; then arroz caldo --with chicken or egg or both; and lugaw is just plain congee--seasoned with salt ?

goto is ox tripe. the more approriate term, i think, is lugaw na may goto. same with lomo being tenderloin, and intestine is isaw. basta, i call congee-based dishes lugaw, unless it has chocolate. :-)

hahaha...true that...waah gusto ko tuloy ng champorado...makabili nga ng instant mix..sana meron sa filipino store (nakakatamad gumawa from scratch pangit kasi bigas dito)

champorado at tuyo. yun ang the best na combination!

The saltiness of tuyo is good contrast to champorado's sweetness. :-)
